Mark’s Low-Sodium Sweet & Spicy Jerk Chicken

Ingredients

  • The Chicken: 4–6 bone-in chicken thighs (or whole chicken legs), all skin completely removed and set aside.

  • The Master Aromatics: * a generous portion of ground Allspice (the primary flavor driver)

    • a generous portion of your favorite salt-free all-purpose seasoning

    • ¼ cup fresh lime juice (plus extra lime slices for mixing into the bag or serving)

    • 1.5 tbsp raw honey

    • 1.5 tbsp fresh garlic, minced

    • 1 tbsp coconut aminos* (low-sodium soy sauce alternative)

  • The Heat (Your Choice): A handful of minced pickled jalapeno peppers (or canned jalapenos / a heavy pinch of cayenne pepper powder).

  • The Mix-ins: ¼ medium yellow or red onion, diced medium.

Step-by-Step Instructions

  1. Prep the Meat: Arrange your skinless chicken thighs or legs on a large, clean surface or cutting board.

  2. Season and Coat: Sprinkle a heavy, even coat of your ground allspice across all the chicken pieces, followed by a generous dusting of your salt-free all-purpose seasoning.

  3. Build the Marinade: Place the seasoned chicken into one or two large, heavy-duty gallon seal-top bags. Pour in the lime juice, raw honey, minced garlic, coconut aminos, your choice of jalapenos or pepper powder, and the diced onion. If you want a fun variance, toss a few fresh lime slices straight into the bag.

  4. Massage and Marinate: Slip on a pair of kitchen gloves, seal the bag tightly (pushing out excess air), and squeeze and shake it vigorously with your hands. Work the honey, lime juice, and aminos into every fold of the meat until fully incorporated. Let it sit out on the counter to marinate for 1 to 2 hours (perfect to prep in the middle of the day for dinner). Come back and gently massage the bag every once in a while to redistribute the juices.

  5. Cook to Perfection (Two Options):

    • The Grill Method (Preferred): Grill the chicken uncovered over hot charcoal for an authentic smoky flavor until the internal temperature reaches 165°F–175°F.

    • The Oven Method: Preheat your oven to 400°F (204°C). Lay the thighs uncovered on a baking pan and bake for 30 to 35 minutes since they are bone-in. If you want a little touch of char at the very end, hit it with the broiler for 1–2 minutes, but keeping it un-charred and baked uncovered is perfect when it’s too hot to step outside! Make sure they are fully cooked at about 175°F (79°C) through!

Heart-Healthy Serving Suggestions

  • The Rice and Beans: Serve alongside a mixture of a low-sodium three-bean blend (rinsed thoroughly in a colander to pull out excess canning sodium) tossed with hot brown rice.

  • The Sides: A crisp pile of shredded, seasoned green cabbage, sautéed lightly in olive oil, fresh lime slices, and a splash of your favorite low-sodium hot pepper sauce if you want. Maybe even a nice oil & vinegar slar with a touch of honey,

  • The Ultimate Fruit Addition: Slices of fresh summer pineapple or apple coins grilled lightly on the grates or a hot pan until they caramelize perfectly.
